Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree
- 1/2 cup chopped walnuts or pecans (optional)
Directions:
1. Preheat oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper and lightly grease.
2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Set aside.
3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
4. Beat in eggs one at a time, then add vanilla extract and pumpkin puree, mixing until smooth.
5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in nuts if using.
6. Spread the batter evenly into the prepared pan and smooth the top with a spatula.
7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
8. Allow to cool completely in the pan before cutting into bars.
