  • Chicken stock or water – 2 tbsp
  • Chicken Marinade (Optional but Recommended)
  • Soy sauce – 1 tsp
  • Black pepper – ½ tsp
  • Cornflour – 1 tsp

3. Directions

First, cook the rice until it is 90% done. Drain it well. Then spread it on a tray and let it cool completely. This step is very important.

Next, marinate the chicken with soy sauce, black pepper, and cornflour. Keep it aside for 10 minutes.

Heat oil in a wide pan or wok on high flame. Add the chicken and stir-fry quickly. Cook until it turns golden and fully done. Remove and set aside.

In the same pan, add garlic, ginger, and green chillies. Sauté briefly. Add onions, spring onion whites, capsicum, and peas. Stir-fry on high heat.

Add the cooked chicken back to the pan. Mix well. Add soy sauce, chilli sauce, vinegar, pepper, and salt. Stir quickly.

Add cooled rice and toss gently. Use high flame. Add chicken stock or water. Finish with spring onion greens.

4. How to Prepare

Preparation starts with rice. Always cook rice in advance. Cooling the rice prevents it from turning mushy. Each grain should stay separate.

Marinating the chicken improves flavor and tenderness. Cornflour also helps seal moisture. High heat cooking is the key. It prevents sogginess and creates smoky flavor.

Use a wide pan or wok. This gives space for tossing. Add sauces around the sides of the pan. This helps release aroma.

Mix gently but quickly. Do not overcook after adding rice. Finish immediately for best taste and texture.
